Vegan Rum Mango Lassi
A delicious Rum Mango Lassi to enjoy on a hot summer day!
Vanilla Coconut Yogurt
Oat, Rice, or Soy Milk
Orange Juice Concentrate Pulp Free
Add Mango, yogurt, 1/2 C oat milk, and orange juice concentrate to blender or magic bullet. Blend for 2 minutes until mango is well pureed.
Add remainder 1/4 C of oat milk and rum and blend well.
Divide between 2 parfait glasses and serve immediately.
Recipe can be easily increased in quantity for more servings.
If you're not Vegan or Dairy intolerant you can substitute regular Vanilla Yogurt and Milk in the recipe.
