Ingredients
  

Soup Base

  • 16 Large Tomatoes
  • 3/4 Cups Onions
  • 1 Cup Fresh Parsley
  • 3 tbsp Garlic Cloves
  • 3 tbsp Fresh Basil
  • 1/2 tbsp Onion Powder
  • 3 tsp Cumin Powder
  • 1 tsp Salt
  • 3/4 tbsp Course Black Pepper
  • 2 tsp Sugar
  • 1/4 Cup Salted Butter
  • 3/4 Cup White Wine
  • 1/4 Quart Whipping Cream
  • 2 Cups Chicken broth

Roux Ingredients

  • 1/2 Quart Whipping Cream
  • 1/2 Cup Salted Butter
  • 3/4 Cup Sorghum Flour

Instructions
 

Soup Base

  • Quarter Roma Tomatoes
  • Mince onions, parsley, garlic, and basil
  • Add Salt, Pepper, sugar, cumin, and onion powder
  • Combine all in stock pot and sautée with butter until softened.
  • Set aside to make Roux

Roux

  • Melt Butter in a sauce pan
  • whisk in flour and cook until slightly browned
  • Gradually whisk in cream and stir until mixture is smooth

Final Steps

  • Add Roux, wine, chicken broth and remaining cream to tomato soup base and whisk in
  • Use hand blender to puree the soup until well blended
  • Cover and bring soup to a boil, reduce heat, and simmer for 30 minutes

  • If soup breaks whisk in a 1/4 c cream prior to serving. Serve warm topped with minced basil
