Fresh Tomato Salsa

Perfect for the summer with fresh sun-ripened tomatoes. It only takes 10 minutes to make and SO much better than store bought salsa! This recipe makes about 2 cups of fresh salsa, enough for 4 people as a side dish or appetizer.

Ingredients
  

  • 1 Jalapeno pepper, including seeds, cut into 4 pieces
  • 1 medium white onion, cut into quarters
  • 1 clove garlic, peeled
  • 1 cup fresh cilantro
  • 1 tbsp fresh lime juice
  • 1 tsp sea salt
  • 3 large ripe Plum tomatoes, cut into quarters

Instructions
 

  • Put the Jalapeno pepper, onion, garlic, cilantro, lime juice & seasalt into the foodprocessor. Pulse until finely combined.
  • Add the tomatoes and pulse until the salsa is the right degree of "chunkiness" for you. I like it rather chunky!
