Chicken Fajita Salad

This is a great dish for the summer, lots of vegetables and spicy chicken tenders. Serve with Creamy Guacamole & Fresh Tomato Salsa. Anyone who isn’t watching their carbs can eat the salad wrapped in a flour, corn or gluten-free tortilla. This makes it the perfect family meal that everyone will enjoy!

  • Frying pan



  • 3 tsp taco seasoning
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 3 tbsp water


  • 24 oz chicken breast, cut into thin strips
  • 3 red paprika peppers or bell peppers, sliced into thin long strips
  • 3 medium onions, sliced thinly and halved
  • 1 tbsp olive oil
  • 1 head crisphead or butterhead lettuce, torn into leaves
  • 2 plum tomatoes, sliced thinly and halved
  • 1 small cucumber, sliced thinly and halved
  • 1 cup pitted black olives, sliced thinly
  • Sour cream or cream fraiche
  • Fresh Tomato Salsa
  • Creamy Guacamole
  • (optional Flour, Corn or Gluten-free Tortilla Wraps for the non low-carbers)


  • Combine the marinade ingredients in a small bowl. Place the chicken strips in a plastic bag and pour the marinade over. Close the bag with a knot and massage the marinade into the chicken. Let stand in refrigerator 3 hours or more.
  • Fry the peppers and onions in the olive oil on high heat until just wilted, about 6 minutes. They should still be a bit crispy. Put in serving bowl and hold warm.
  • Fry the chicken in the marinade until tender and cooked through. Put in serving bowl and hold warm.
  • Put the lettuce, sliced cucumber, tomato, olives and sour cream in small serving bowls.
  • Let everyone assemble their own salad at the table with their choice of Chicken, Peppers, Onions, Lettuce, Sliced Cucumber, Tomato, Olives, Sour Cream, Guacamole and Salsa.
