Danish Raspberry Cream Mousse – “Hindbærfromage”

This mousse is a favorite summer dessert in Denmark. Light and airy with the rich taste of raspberries and cream. As this recipe is not cooked, please use pasteurized eggs for this recipe. In my adaption of this classic recipe without the sugar, it is a perfect sweet treat for Keto, Low Carb and Diabetic diets.

Equipment

  • Mini-foodprocessor (or blender)
  • Stand Mixer
  • Whisk
  • small saucepan

Ingredients
  

  • 1 ½ tsp unflavored gelatin powder
  • 3 tbsp water
  • 2 cups raspberries (fresh or frozen)
  • ½ cup Monkfruit + Erythritol sweetener
  • 3 pasteurized egg yolks
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 3 pasteurized egg whites

Instructions
 

  • Preheat the oven to 200F (100C)
  • In a small heatproof bowl, sprinkle the gelatin over the 3 tbsp of water. Let dissolve for 5-10 minutes
  • Put the raspberries in the small saucepan over medium heat. Let them bubble while whisking until they are smooth. Take off heat.
  • Put the gelatin into the oven for just a couple of minutes until melted.
  • Whisk the melted gelatin into the raspberries until well combined. Set aside and let cool.
  • Put the egg yolks, sweetener and vanilla extract into the mini foodprocessor. Process on high about 1 minute until creamy and the yolks have become lighter.
  • Whisk the egg yolk mixture into the cooled raspberries. (The raspberries are warm, but not hot enough to cook the eggs.) Pour into a larger mixing bowl.
  • Whip the cream in your stand mixer just until stiff. Fold the whipped cream into the raspberry mixture.
  • Clean the stand mixing bowl and beater thoroughly and then whip the egg whites until stiff in your stand mixer. Fold the egg whites into the raspberry cream mixture.
  • Spoon the mousse into 4 dessert bowls or cups. Cover with plastic wrap and chill for at least 3 hours.
  • Just before serving, garnish with fresh whipped cream, fresh raspberries and mint leaves.
