Gluten Free Pineapple Pecan Upside Down Cake

One of my favourite cakes for the summertime, I’ve adapted this recipe to be a Gluten Free dessert. Especially yummy with the brandy topping!

Gluten Free Pineapple Pecan Upside Down Cake

Ingredients
  

  • 1/2 Cup Salted Butter
  • 3/4 Cup Brown Sugar
  • 1/4 Cup Brandy
  • 2 tsp Vanilla Extract
  • 2 Cups Raw Pecans Chopped
  • 1 Cup Salted Butter
  • 1 Cup Raw Sugar
  • 4 Large Eggs
  • 1 1/4 Cup Sorghum Flour
  • 1 1/4 Cup Coconut Flour
  • 2 tsp Xanthan Gum
  • 1 tbsp baking powder
  • 1 Cup Pineapple syrup from the can
  • 2 tsp Vanilla Extract

Instructions
 

  • Combine first 4 ingredients together in a saucepan. Bring to a medium boil, Stir constantly until sugar is dissolved and mixture thickens. Add in pecans. Pour this mixture into a prepared Square baking pan (buttered and GF floured) and set aside
  • Lay Pineapple slices close together on top of sugar mixture. Best if kept in a single layer.
  • In a large mixing bowl cream 1C butter with 1C sugar
  • Beat eggs and add to butter/sugar mixture
  • Add in Pineapple juice and blend until smooth
  • Combine all dry ingredients and mix well.
  • Add dry ingredients to wet ingredients and blend again until smooth
  • Pour cake batter on top of Pineapple/sugar base and spread evenly in the square baking pan
  • Bake in pre-heated 350 degree convection oven (or 375 degree regular temperature) for 10 minutes. Reduce heat to 325 degree convection oven (or 350 degree regular temperature) and cook fro another 30-40 minutes until golden brown.
  • Remove from oven. Take a sharp knife and cut around the outside of the cake to free it from the pan. Let sit for 5-7 minutes to cool slightly and for syrup to set.
  • Flip square plate or serving dish and center on top of baking dish. With oven mitts hold plate and baking dish tightly together and flip over. Ladle any remaining sauce from plate or pan on top of cake. Refrigerate and allow to cool before cutting and serving. Cut into 8 slices. Enjoy!
