Gluten Free Blueberry Pancakes

I love pancakes, topped with lots of butter, real maple syrup, and whipped cream! This is my Gluten Free version. For some extra decadence add my blueberry sauce on top! Perfect in the summertime when blueberries are ripe in the garden.

Gluten Free Blueberry Pancakes

Ingredients
  

  • 3 Cups Rice Flour
  • 1 Cup + 1 tbsp Tapioca Flour
  • 1/4 Cup Sugar
  • 1.5 tbsp Baking Powder
  • 2 tsp Xanthan Gum
  • 5 Eggs Separated, Whites whipped
  • 1 tbsp Vanilla Extract
  • 1/2 Cup Salted Butter, melted Can use Oil for Dairy Free
  • 3.5 Cups Milk Can use Oat Milk for Dairy Free

Blueberry Sauce

  • 4 Cups Blueberries
  • 1/2 Cup Water
  • 1/4 Cup Corn Starch
  • 1 tbsp Vanilla Extract
  • 1/2 Cup Maple Syrup

Instructions
 

Make the batter:

  • Combine first 6 dry ingredients.
  • Separate Eggs
  • Add egg yolks, Milk, Vanilla Extract, and Butter to dry mixture. Blend until smooth.
  • Whisk egg whites until peaks are firm to touch. Gently Fold into pancake batter with a spatula until blended. Set aside
  • Add Corn Starch to cold water. Whisk until smooth

Make the Blueberry Sauce

  • Add Blueberries, vanilla extract, maple syrup, and corn starch mixture to saucepan. Bring to a boil and reduce heat to simmer on low. Stir constantly until mixture has darkened in colour, no longer milky, and thickened. To thin simply add a bit more water or to thicken more blended. corn starch/water mixture.

Cook the pancakes:

  • Use medium fry pan over medium low heat. Add enough oil to coat. Once heated add batter by 1/3- 1/2 Cup for dollar size pancakes. Usually can fit 3 per fry pan. Cook until mixture is bubbling on top, flip and brown other side.
  • Serve warm with butter, real maple syrup, blueberry sauce, and whipped cream! Enjoy!

Notes

Can be easily adapted to Dairy Free and Vegan diets with substituting with Oil and Oat Milk.
