Summer Garden Salad

This time of year we have abundant greens, herbs, and snow peas to pick in our gardens. It was a lovely summer evening and so pleasant to walk down to my lower garden and harvest the bounty for supper! I’ve added in fresh pepper and cucumbers from our local market and sun dried tomatoes harvested and processed last season. This is a light side salad or a tasty topping for a veggie, fish, or meat burgers. Enjoy!

Ingredients
  

  • 1 Cup Kale or Spinach minced
  • 1 Cup Arugula minced
  • 1 Cup Mustard minced
  • 1 Cup Snow Peas minced
  • 1 tbsp garlic minced
  • 1/2 Cup Yellow Peppers minced
  • 1/2 Cup Red Peppers minced
  • 3/4 Cup Sun Dried Tomatoes minced
  • 1/2 Cup Scallions minced
  • 1 tbsp red pepper spice
  • 1 tbsp paprika spice
  • 1/2 tbsp Rice Vinegar
  • 1/4 Cup Mayonnaise
  • 1/4 Cup Sour Cream
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper Course ground

Instructions
 

  • Mince all greens, scallions, snow peas and mix together.
  • To make dressing, combine mayonnaise, sour cream, dried spices together, rice vinegar, and whisk until smooth.
  • Mince Sun Dried tomatoes peppers, and garlic. Add to dressing mixture.
  • Add dressing to mixed greens once ready to serve.
  • If serving as a salad decorate bowl with thinly sliced cucumbers, layered around dish and a sprig of fresh rosemary in the middle.
